March No-Baking Cakes




Staples


     ✽ Various nuts: hazelnuts, almonds, cashew nuts, pecans & walnuts;
     ✽ Raw cocoa powder & drinking cocoa;
     ✽ Dates & other dried fruits;
     ✽ Organic sweeteners - agave & maple syrup;
     ✽ Coconut flakes; 
     ✽ Low-fat Mascarpone cheese  (instead of coconut oil - the flavour is too strong for me);
     ✽ White & dark cooking chocolate;
     ✽ Vanilla scented candle to help me relax;
     ✽ Accessory - handmade glove.



Week 1 - Ferrero-Rocher 

Ingredients:

-hazelnuts
-dried fruit (I used mulberry & raisins)
-water
-nut butter (I used mascarpone cheese)
-cocoa powder
-optional sweetener (I used agave)
-chocolate or chocolate chips (I used dark cooking chocolate)



Week 2 - Chocolate Tart

Ingredients, my version:

-almonds
-dates
-pinch of Himalaya salt
-low-fat mascarpone cheese
-raw cocoa powder
-maple syrup
-grated cooking white chocolate

Week 3 - Swiss Roll

White layer:
-1/2 cup shredded coconut
-1/3 cup oats (flour or ground)
-2 tablespoons of coconut oil (I replaced it with mascarpone cheese, as usual)
-2 tablespoons of maple syrup

Dark layer: 
-1/2 cup nuts (seeds)
-1/2 cup oats (flour or ground)
- 3-4 tablespoons of cocoa powder
-1/2 cup of dried fruit
-2 tablespoons of maple syrup

Week 4 - Raw Carrot Cake 

Base:
-carrots
-almonds
-shredded coconut
-dates
-cinnamon

Frosting:
-macadamia nuts
-lemon juice
-coconut butter
-maple syrup
-water

  1. These are such great recipes - thanks for sharing. I love experimenting with new sweet things / cake ideas.
    I have just discovered an alternative for flour - banana flour which I got online from Indigo Herbs. Its lovely as it adds a lovely texture and sweetness so you don't need to add a sugar alternative.

  2. What a varied selection of no bake recipes. Carrot cake is one of my favourites but I've never tried a no bake version, it looks delicious. Thanks for sharing at #HandmadeMonday
