Broad beans and spring onion soup, decorated with fresh basil, Parmigiano cheese and red chillies.
Fruit pizza inspired by Howling at the moon. I replaced the biscuit base with nuts base and the yoghurt with a mixture of mascarpone cheese and desiccated coconut.
Quinoa salad - quinoa, kidney beans, tomatoes, feta cheese, basil and olive oil with chilli. I know it doesn't involve too much cooking, but I like making this salad. You can be as creative as you can and use other ingredients: cheek peas instead of beans, antipasti (sun dried tomatoes, artichoke or aubergines) and other fresh vegetables (spring onion, cucumber, lettuce) or you can replace quinoa with boiled potatoes. We have these salads at least two times a week and we love them!
Mustard pork and sweet potatoes cooked in slow cooker plus green steamed vegetables - no added salt.
Gooseberry cake - not necessarily the healthiest as I used sugar, but it is fresh and quite sharp from gooseberries and it goes well with sugarless coffee in the morning.

DeleteIf I hadn't just had lunch I'd be hungry again just from looking at these pictures! Might try the quinoa salad once (without chili though - I'm allergic) - looks absolutely yummy!

DeleteLooks good, I'm afraid to say it's the Gooseberry cake that appeals to me most! My nan used to cook a lot with gooseberries and they always make me think of her.
