Dark Chocolate Rye Cookies


Ingredients:

  • 200g dark chocolate
  • 25g unsalted butter
  • 2 eggs at room temperature
  • 100g light brown sugar
  • 130g wholemeal rye flour
  • 1/2 tsp baking powder
  • 50-70g icing sugar

Method:

  • Melt the chocolate and butter and leave to cool for 10 minutes
  • Whisk the eggs and the brown sugar
  • Incorporate the melted chocolate
  • Add the rye flour and baking powder
  • Make a dough then put it in cling film and freeze for approx 20-30 min
  • Roll approx 13-15 cookies from the dough, then roll them in a bowl with icing sugar
  • Bake them at 180 degrees for approx 12-15 minutes

    1. Absolutely gorgeous! I can't taste the rye to be honest and I do like rye bread as well. I think it is a combination of all ingredients where the star is actually the dark chocolate :).
