Waffles Two Ways

After acquiring a waffle maker in a whim, I wanted to try a healthy recipe with three ingredients: bananas, eggs and ground almonds. The result was fabulous and I ended up eating them for breakfast for four days in a row. I am normally using 2 bananas, 2 medium eggs and about 2-3 tablespoons of ground almonds (you can use more and you can also add desicated coconut). You end up with about 4 delicious waffles that you can eat with anything you fancy: fruits, jam, honey, syrup, cream, etc.

I have also tried the caloric version with flour, milk and butter found on this blog. They are harder work and quite neutral but puffy and crunchier in texture. We ate them with honey and jam and they are less sweet and have way more calories. Both versions can be frozen and eaten at a later date -  simply put them in the toaster!

I must admit that both my husband and I prefer the banana ones as not only are healthier but sweeter too so you can eat them with fruits instead of jam or honey (they are perfect with berries or grapes). The photo above shows the banana version and the ones below are the calorific ones. Which ones would you prefer?

  1. I've never felt the need for a waffle maker until this moment!
We do enjoy waffles in our family but I thought a waffle maker would make us have them unhealthily often. Hearing there is a healthy option has me possibly changing my mind! They look delicious too :-)

    1. Haha, me neither until I came across the banana waffle recipe. The good thing is that you can change the plates to make sandwiches and paninis as well. My husband really loves the latter :). But I totally recommend the banana waffles they are absolutely delicious!

  2. Hi they look good. I don't have waffle maker but maybe you could try using gram flour and a dairy free milk? I wonder if that would work, it works for pancakes. Just an idea if you are experimenting with healthier ways of making them. Great food photography!
